Driven by this belief, Vivien Durand opened Le Prince Noir in Lormont in 2014. In less than nine months, the restaurant earned a Michelin star, celebrating its bold and free-spirited cuisine, where exceptional ingredients meet the craftsmanship of passionate producers.

Behind a relaxed demeanour lies a committed perfectionist who transcends technical constraints to let the sensitivity of flavour take centre stage. Each dish is crafted as a pure emotion, elevated by the chef’s creative energy.

In November 2023, a new chapter began at the heart of the Musée du Louvre, through an ambitious culinary project launched in partnership with the ALAIN DUCASSE and MUSIAM PARIS groups. Alongside iconic figures such as Jessica Préalpato (named World’s Best Pastry Chef in 2019), Florent Ladeyn (Michelin-starred and Green Star chef), bakers Pascal Rigo and Arnaud Chevalier, and Franco-Brazilian chef Alessandra Montagne, Vivien Durand embarked on a new gastronomic adventure blending excellence, creativity, and transmission.
